Low Carb, Low Fat Brownies

(also gluten and wheat free)

1 box gluten free brownie mix (make sure its wheat free)
1 can pumpkin, 1 cup water.

Mix together and bake for 30-35 min at 350.



Turkey Taco Soup

Ingredients:

•1 1/4 lbs ground turkey
•1 medium onion
•1 (15 ounce) can crushed tomatoes
•1 (15 ounce) can Rotel tomatoes & chilies
•1 (15 ounce) can black beans, undrained
•1 (15 ounce) can pinto beans, undrained
•1 cup frozen corn
•1 (1 1/4 ounce) package taco seasoning
•1 (1 1/4 ounce) package dry ranch dressing mix

Directions:

Brown the turkey and onion.
Add to a pot with the remaining ingredients.
Cook over medium low heat for 30 minutes.
Serve

Here is a delicious healthy recipe for you to try! Dr. Bobbie loves it!

INGREDIENTS:
1 head head lettuce (chopped)
1 green pepper (chopped)
1 cup celery (leave)
1 onion (chopped)
1 cup frozen peas (uncooked)
2 cups miracle whip (lite)
2 tsps sugar (equal or sweet and low)
4 ozs bacon bits (bacos bacon bits you can also use crumbled leftover)
2 cups cheese (shredded)

PREPARATION STEPS:
1 Layer all of the above vegetables in order, evenly.
2 Cover with plastic wrap securely and refrigerate overnight.

Lime Jello Salad

Bunlady's Note:
This is my moms recipe, i don't really know where she got it but I have always liked it. I find that I can substitute low fat evaporated milk and low-fat cottage cheese and use sugar free Jello and sugar free pineapple to make this fit into my diabetic diet plan better.

Servings: 9

Ingredients:

• 1 (3 ounce) package lime Jell-O gelatin
• 1 cup boiling water
• 1 cup evaporated milk
• 1 cup small curd cottage cheese
• 1 cup crushed pineapple, drained
• 1/4 cup diced celery
• 1/4 cup chopped nuts (optional)

Directions:

1.Dissolve lime Jello in boiling water add evaporated milk and mix till Jello is completely dissolved.
2.Add the rest of the ingredients and mix till blended.
3.Pour into a 9-inch square pan and chill till set.

Belly-Blasting Soup

Get 2012 started right with this delicious soup. It’s loaded with fiber to keep you feeling fuller for longer, and the chili powder has a component called capsaicin that revs up your metabolism. It’s the perfect way to get a jump start on getting healthy in the New Year!

Servings:Makes 4 1/2 cups

Ingredients:

• 1 (14.5-oz) can of fire-roasted tomatoes with medium chilies
• 1 (15-oz) can of chick peas
• 2 cloves garlic, chopped
• 2 cups vegetable or chicken broth
• 2 tbsp chili powder
• 1/4 cup lime juice
• 1/2 cup chopped cilantro

Directions:

1.Puree the tomatoes, chick peas and garlic with the broth and chili powder in a blender (in batches, if necessary) transfer mix to a medium large pot, bring to a boil, lower the heat and simmer for about 10 minutes. (If using and an immersion blender, you can process the ingredients directly in the cooking pot).
2.Before serving, stir in the like juice and cilantro.
3.Enjoy!
