Low Carb, Low Fat Brownies

1 box gluten free brownie mix (make sure its wheat free)1 can pumpkin, 1 cup water.
Mix together and bake for 30-35 min at 350.

Ingredients:
•1 1/4 lbs ground turkey
•1 medium onion
•1 (15 ounce) can crushed tomatoes
•1 (15 ounce) can Rotel tomatoes & chilies
•1 (15 ounce) can black beans, undrained
•1 (15 ounce) can pinto beans, undrained
•1 cup frozen corn
•1 (1 1/4 ounce) package taco seasoning
•1 (1 1/4 ounce) package dry ranch dressing mix
Directions:
Brown the turkey and onion.
Add to a pot with the remaining ingredients.
Cook over medium low heat for 30 minutes.

Lime Jello Salad

This is my moms recipe, i don't really know where she got it but I have always liked it. I find that
I can substitute low fat evaporated milk and low-fat cottage cheese and use sugar free Jello and sugar free pineapple to make this fit into my diabetic diet plan better.
Servings: 9
Ingredients:
• 1 (3 ounce) package lime Jell-O gelatinDirections:
1.Dissolve lime Jello in boiling water add evaporated milk and mix till Jello is completely
dissolved.
2.Add the rest of the ingredients and mix till blended.
3.Pour into a 9-inch square pan and chill till set.

Ingredients:
• 1 (14.5-oz) can of fire-roasted tomatoes with medium chiliesDirections:
1.Puree the tomatoes, chick peas and garlic with the broth and chili powder in a blender (in
batches, if necessary) transfer mix to a medium large pot, bring to a boil, lower the heat
and simmer for about 10 minutes. (If using and an immersion blender, you can process the
ingredients directly in the cooking pot).
2.Before serving, stir in the like juice and cilantro.
3.Enjoy!
